Fine and persistent perlage. On the nose we are struck by the unmistakable notes of bread crust, toasted hazelnut and honey. On the finish we may also pick up hints of small ripe fruits. It is a smooth and structured wine, in which the acidic and savory components show themselves in perfect balance.
The grapes are subjected intact to a soft pressing. The following fermentation takes place in temperature-controlled steel tanks, followed by an aging period characterized by frequent bâtonnage. Racking is carried out the following spring. After prise de mousse there is a 36-month period of aging on the lees inside the La Versa vault.
Great for aperitifs and as an entire meal with fine foods.
