Immediately striking is the deep ruby red color. Hints of ripe red fruit prevail on the nose. The taste is enveloping and sweet, characterized by a slight tannic note.
After destemming, cold maceration is conducted for about 3 days in steel tanks. This is followed by a partial refermentation in autoclaves, which gives the typical sweet and sparkling character.
Best paired with dry pastries and fruit tarts. Also pleasant to taste with sharp cheeses.
